Vyne isn’t just a restaurant—it’s a living tribute to a legacy of hospitality, heritage, and heart. Rooted in a family story that began in the late 1940s, the Yimoyines name has long been associated with exceptional food and warm, welcoming connection.
It started when Constantine Yimoyines and his brother Andrew opened a small diner in West Hartford. With Greek values of treating strangers like family, they built something greater—a celebrated restaurant brand known as Les Shaw’s, which quickly became a culinary destination across Connecticut. Whether in West Hartford or New Haven, the Les Shaw’s experience was about more than meals—it was about elegance, connection, and community.
Although Constantine once insisted that his sons Dean and John pursue medicine instead of restaurants, the call of tradition proved stronger than expectations. Years later, what began as a café inside the family’s furniture store evolved into something extraordinary. When the business outgrew its original space, the vision for Vyne was born.
Vyne was designed to transport you. Whether you walked in from Middlebury or Manhattan, the space crafted by a leading NYC architecture firm was meant to feel like you’d entered a hidden gem in Los Angeles or Manhattan. The final design, in a twist of fate, mirrored Les Shaw’s of New Haven—a divine nod to the family's culinary roots.
The name “Vyne” came one night over dinner and wine, as Dean Sr. and Linda shared ideas for their vineyard just up the road. When Dean jokingly said “Let’s call it Vyne—with a Y for Yimoyines,” the table fell silent. Everyone knew it was perfect and this magically experience was born.
Vyne is a place where food is exquisite, and the people are unforgettable. It’s a space of casual elegance with timeless luxury and a special energy creating unforgettable memories and lifelong connections. A place where friends become family, and every meal is savory and tells a story.
